Magnum Champagne cuvée Brut sous bois Billecart-Salmon - Lot 160
Magnum Champagne cuvée Brut sous bois Billecart-Salmon The House of Billecart-Salmon, founded in 1818 in Mareuil-sur-Aÿ by Elisabeth Salmon and Nicolas François Billecart, sees today the seventh generation perpetuating the requirement of quality, represented by Mathieu Roland-Billecart. Although two centuries have passed since the creation of Billecart-Salmon champagnes, the motto has not changed: "focus on quality, aim for excellence". The Brut Sous Bois cuvée is a total mastery of the art of blending, rediscovering the spirit and ancestral know-how of the original champagnes, the result of a vinification entirely in oak barrels at low temperature followed by 7 years of aging in cellars. Equal proportion between the 3 Champagne grape varieties Chardonnay Premiers et Grands Crus from the Côte des Blancs; Pinot Noir Premiers et Grands Crus from the Montagne de Reims, Aÿ and Mareuil sur Aÿ; Pinot Meunier from the Vallée de la Marne, this cuvée offers a crystalline and radiant golden yellow robe with brilliant reflections. Its strength of character and its straightforwardness will make it the ideal companion of white meats or a pan-fried mushroom.
