About whisky: Principium, an exceptional bottle - the founding whisky of Domaine des Hautes Glaces Committed to a holistic, organic and regenerative approach, the Hautes Glaces farm-distillery aims to offer the world specialty whiskies, "Grands Crus" that give a taste of the spirit of a living land and fertile nature. On the occasion of this charity sale organized in aid of the GoodPlanet Foundation, Domaine des Hautes Glaces is offering a unique bottle of its inaugural cuvée: Principium. Principium: an invitation to taste the experience of time. Principium is Latin for "in the beginning". It's THE founding cuvée of Domaine des Hautes Glaces. In spring 2011, the distillery's first eaux-de-vie flowed from the first harvest of organic, regenerative barley grown on the Gabert climate. These eaux-de-vie are now housed in six separate casks, where the gentle patina of time transforms them into whisky. A total of 1,616 empty bottles were then produced, each promised to be filled on a day chosen by its owner (in three years, ten years, twenty years...). This whisky will forever be the oldest Domaine des Hautes Glaces whisky, and the oldest whisky produced on a regenerative organic farm. Today, this single malt still rests in the heart of the winery, where the gentle patina of time refines its character. To own this exceptional bottle is to join a pioneering adventure, that of the oldest organic and regenerative whisky distillery in the world, but above all it is to experience a unique feeling: the freedom to come one day to the Domaine to bottle your whisky at ideal maturity, according to the patience and wisdom of the time you choose to give it.
